White Bean Tuna Salad

White Bean Tuna Salad

INGREDIENTS:
Large can of tuna (or 2 small ones) packed in olive oil
1 cup of cannellini beans (if canned than drain and rinse will with water)
¼ cup chopped dill
½ cup diced red onion
¼ teaspoon red pepper flakes
1 cup of chopped arugula
2 – 3 tablespoons Red Wine Vinegar
1 tablespoon extra virgin olive oil
2 tablespoons sundried tomatoes
Kosher salt to taste

Mix all together and serve.
